Egg Fried Rice Recipe

Fried Rice is good option for anytime meal. It's made with cooked rice and some veggies and usually mixed with other ingredients like eggs, chicken, meat and seafood. If you have some leftover rice, then there's no better option to make this recipe.

 2 cups Cooked RiceRice should be 80-90% cooked.
 2 tsp Apple Cider Vinegarcan be used white vinegar.
 2 tsp Light Soy Sauce
 34 Garlic Cloves (finely chopped)
 1 cup Carrot (finely chopped)
 1 cup Baby Corns (chopped)
 5 tbsp Chopped Spring Onion (white and green parts)
 ½ cup Capsicum (finely chopped)
 ½ cup French Beans (finely Chopped)
  tsp Crushed Black Pepper
 4 tbsp Extra Virgin Olive Oilcan be used any oil.
 4 Large Eggs (whisked)
 Salt to taste

Heat 1 tablespoon of oil in a large pan over medium heat. Add egg, and cook until scrambled. Remove egg, and transfer to a separate plate.

Add an additional 2 tablespoon oil to the pan over medium heat. Add carrots, white onion, capsicum, corns and garlic, and season with a generous pinch of salt and pepper. Saute for about 5 minutes or until the onion and vegetables are soft.

Increase heat to high, add in the remaining 1 tablespoons of oil. Immediately add the rice, half green onions, soy sauce and vinegar, and stir until combined. Continue stirring for an additional 3-4 minutes to fry the rice.

Now add in the eggs and stir to combine. Remove from heat, and stir until combined. Garnish with remaining green onion. season with extra soy sauce, if needed. Your Rice is ready, Serve immediately.
