Mexican Kidney Beans Salad

Kidney beans usually known as RAJMA in india. Kidney beans contain antioxidants that boost the immune system. They are also an excellent source of healthy amino acids, vitamins and minerals which help build the cells of our immune systems.

 2 cups kidney beans, drained and rinsed
 1 cup Cucumber, chopped
 1 Medium Size tomato, chopped
 2 Heads fresh Lettuce(red and green), rinsed, dried and tornYou can even use a couple different herbs to your liking.
 1 cup Onion, chopped
Dijon Vinaigrette
 2 tbsp lemon juice
 3 tbsp Virgin Olive Oil
 1 tsp Dijon Mustard
 ½ tsp Fresh Garlic Paste
 1 tsp Sumac powder
 Salt and pepper to taste
 ½ Bunch of Cilantro, chopped

In a medium sized bowl, combine the kidney beans with the chopped vegetables,cilantro and lettuce.

To make the vinaigrette, in a separate small bowl, whisk together the lemon juice, oil, mustard, fresh garlic, sumac, and pepper.

Pour the vinaigrette over the salad and combine well with a large spoon. Add a dash of salt and pepper if you need to.

Cover and let sit in the fridge for half hour to an hour before serving.
