Poha recipe is very common across india. However in western india, particularly in maharashtra it is made as breakfast or even as an evening snack. even in maharashtra there are myriad versions of it and one of the popular version is kanda poha made with onions and beaten rice.

 4 cups Thick Poha (white or red poha)
 2 cups Chopped Onion
 ½ cup Chopped Tomato
 5 tbsp Roasted Peanuts
 ½ tsp Turmeric Powder
 2 tsp Mustard Seeds
 1 tsp Fennel seeds (saunf)
 2 tbsp Chopped Green Chillies
 10 Curry Leaves
 1 tsp Sugar
 3 tbsp Cooking Oil
 Salt
For Garnishing
 5 tbsp Chopped Coriander Leves
 Lemon juice

Rinse the poha in water till they soften. They should loose their crunchiness and when you break them between your finger, they should easily get crushed or mashed.

Now add sugar, salt and turmeric powder to the poha and gently mix.

Heat oil in a pan. Crackle the mustard seeds first. Then add onions and saute them till they become translucent.

Add curry leaves and green chilies. Saute for half a minute.

Add the roasted peanuts and stir. Add the poha and stir. Cover and steam the poha for 2-3 minutes on a low flame.

Switch off the fire and let the onion poha remain covered for 1-2 minutes. Remove the lid and sprinkle some lemon juice and coriander leaves on poha. Give a gentle stir and serve hot onion poha with tea.
