Cookie’s are typically sweet snacks where as biscuit can be both sweet and savoury. moreover, biscuit are generally crisp compared to cookies which are chewy in nature. further, the cookie are usually round in shape and biscuits can be in round, square and even rectangle in shape.

Sieve the flour, baking powder and powdered sugar together. Add salt to the mixture, and mix to combine.

Add ghee and gently combine with your fingers, to form a crumbly texture. Once the ghee is evenly distributed and the texture resembles breadcrumbs, add 2 tbsp of milk and knead gently.

The dough should look smooth on the exterior, but be crumbly.

Place on a butter paper laid on a work surface. Knead out the dough into a
1cm thick sheet. Cut out cookies using a cookie-cutter.

Place the cookies on a greased Idli utensil.

To preheat the baking utensil, fill enough salt in a heavy-bottomed utensil to cover the bottom. Place a small bowl or metal ring to elevate from the surface of the salt. Heat on a medium flame for 10 minutes.

Place the cookies in the preheated utensil and cook for 20 minutes on medium-low heat, or until the edges start to become a dark brown.

If you are using an oven, bake in an oven preheated to 160 degrees Celsius for 20 minutes.

Remove from the idli stand and allow to cool. once its cool down, serve with coffee or Masala tea.
