
firstly, in a pan heat 1 tbsp butter, Add onion, beans, carrot, tomato, peas , mushroom and cauliflower.
Add salt and stir fry on high flame for a minute, also add green capsicum.
stir fry until the vegetables shrink slightly yet remain crunchy. keep aside.
In a large wok, heat oil. add cumin seeds, onion and chilli, saute until onions turn golden brown.
keeping the flame on low, add tomato, turmeric, chilli powder, coriander powder and salt
saute on low flame until the spices turn aromatic and tomatoes turn mushy.
Add sauteed vegetables. along with cumin powder and pepper powder.
mix well keeping the flame on high.
finally, at the end add coriander leaves and enjoy veg jalfrezi, you can serve with roti or butter naan.
